Flying Fish Make A Tasty Dish

Asian carp, those weird-looking silver fish with eye sockets at the bottom of their skulls and a tendency to knock fishermen and boaters silly as they fly through the air, are also good to eat! Turns out these fish that have overrun many rivers and are threatening the Great Lakes have white, flaky flesh similar to that of cod.

Researchers, looking for ways to reduce their numbers, are encouraging anglers to start harvesting them—in vast quantities—and have produced an instructional video showing how to clean and debone these giant exotics for the grill or fryer.

They've even given them more pallet-friendly names, like "Kentucky Tuna" and "Silverfin" to make them more attractive to fish eaters.

Next time you're on the river and the silver bullets start flying, take a couple of them home and grill yourself up a (Kentucky) tuna steak.
